Back to School: Pencil Cake Push Pops



What says "back to school celebration" more clearly than a pencil cake push pop?


These have become a favorite around here and have been a requested dessert for our back to school celebration dinner three years running!


It feels like just yesterday we were celebrating the last day of school, but we're already gearing up to head back this week for 2nd grade! Dessert is always a 'yes' in the Agulto House for any celebration, no matter how big or small, and these pencil cake push pops are so easy to make!


Step 1: Bake any vanilla box cake (or get super fancy and make from scratch), tint 2/3 of the batter yellow in one baking sheet, and the remaining 1/3 should be tinted pink.


Step 2: Once completely cooled, use the push up pop containers to cut out your cake, starting with pink for the erasers. Pipe some grey tinted frosting between the pink and first yellow cake layer. Add yellow layers of cake until the container is filled to the edge.


Step 3: Add frosting with a spoon and pull down the edge of the container, repeating on all sides until you have the beginning of a point shape. Add a large chocolate chip on the top (Ghirardelli chips are great for this.) and use a flat knife to smooth out frosting.
